If I have 1000 pineapples and dedicated them all to Juice production, reaping the profit would take forever. This way, all 1000 pineapples are producing items at the same time, rather than a single Juice item in linear time.

I do the same thing but that is because I have enough coins right now. Now as for the production time on products get neighbors to help you and the time is cut way down.
