There shouldn't be a difference in them other than the look and cost. Since they are both stables that hold horses the devs just didn't pick one and not the other to be harvest-able they made both harvest-able. All the animals buildings can only hold 100 of each type of animal. You only need 90 horse hairs to max out the facility so with 100 horses you can max out the violin and bow every 2 days. I think that will work for most people.
