If I'm actually there to collect my goodies at 3, do I earn more than if I don't actually pick them up until 10pm? Like does the time the quest ends determine how much you get or the time you actually cash in?

It does not appear to change the amount you earn as long as you finish within the time limit. It won't change if you pick it up later.
